Ans:  Aman knew that the potato sabzi had got spoilt by its rotten smell.

Ans:  Yes, sometimes when the food is kept out for a long time it gets spoilt. We can say that by looking at the food which is soft and by its rotten smell.

Q 3.  Preeti told Nitu not to eat the potato sabzi. What would have happened if she had eaten it?
Ans:  Nitu would have got a stomach upset and would fall sick.

Ans:  Biji returned the bread packet because the bread was too soft and the bread looked stale. She guessed by looking at the soft bread and the date of expiry written on the bread packet.

Ans:  We can know the date when the bread is packed and the date of expiry.

Ans:  I look for the date of expiry of that packet.

Bread kept in closed box with a little water changes from good bread to bad bread.

Q 1.  Find out the reason for these changes. From where did the fungus come on the bread?
Ans:  The fungus came from the bread with little bit of water after many days.

Q 2.  Different kinds of food items spoil due to different reasons. List some seasons and conditions in which food spoils quickly.
Ans:  Food gets spoilt during summer season due to humidity and dryness. Food gets spoilt during rainy season due to wetness.

Given below are some food items and some simple methods by which these could be kept fresh for one or two days. Match the correct pairs :

4.4   MAMIDI – TANDRA and PICKLES: (Tasty, Tasty)

Q 1.  Why was sugar and jaggery mixed into the mango pulp and dried in the sun?
Ans:  Sugar and jaggery were mixed into the mango pulp to make it sticky and hard.

Q 2.  Why did Appa first choose the most ripe mangoes to be used for making the mamidi    tandra?
Ans:  Appa chose the most ripe mangoes for making mamidi   tandra to make it sweet and pulpy.

Q 3.  How did the brothers make the mamidi   tandra ? Write down step by step what they did for this.
Ans:  They made a pulp from the ripe mangoes :
i) They strained the pulp.
ii) Then they crushed the jaggery.
iii) They mixed sugar and jaggery  with the pulp.
iv) Next they spread the pulp into a thin layer over the mat.
v) Next day they spread the sugar and jaggery pulp over the first day’s pulp.
vi) They did this for a number of days.

Q 4.  What things are made in your house from ripe and unripe mangoes?
Ans:  From ripe mangoes we make mango juice and ice cream.
From unripe mangoes we make mango pickle, aampana – a kind of drink.

Ans:  Mango pickle:  lemon pickle; prawns pickle: mackerel pickle: vegetable pickle

Ans:  We make mango pickle at home. My mother makes it. She learnt it from her mother.

Q 2.  What all things are needed to make any one type of pickle in your house? How is the pickle made? Find out the recipe and write.
Ans:  Raw mangoes, salt, red chillies, mustard seeds, garlic .. Refined oil , hing  is needed for making pickle.

Method :  Cut the raw mangoes into small pieces. Add salt to it and keep it closed for a day.  The next day grind red chillies, mustard seeds. Make a paste of this. Heat oil and put garlic and hing  and the ground masala and then add the salted mango pieces. Put in a bottle and close the lid. Keep it for two days. Then it is ready to eat.

Q 3.  How are these things made in your house, papad and chutney ?
Ans: 
Papad – Rice papad is made with rice powder .Make a paste and steam it by putting in small plates. Remove and dry in the sun.
Coconut chutney – is made with green chillies, garlic, tamarind and coconut  and ginger. Grind all together and season with mustard and curry leaves.

Q 4.  For a two day trip to Kolkata what food items would you carry with you? How would you pack them? What food would you eat first?
Ans:  I would carry sandwiches, potato chips, banana chips ,kakra, dry snacks like chakuli, sev and farsan.  All the dry items can be stored in air tight bags or closed containers. I would eat the sandwiches first as it tends to get spoilt fast.

What we have learnt :
Glass jars and bottles are dried well in the sun before filling them with pickle so that they don’t catch fungus and get spoilt.
Potato chips, banana chips chakuli sev can be kept in air tight containers so that we can enjoy them throughout the year.
